Shopping & Ingredients List:
- 250g Almond Flour
- 1 tsp Baking Soda
- 50g Arrowroot Powder
- 1 tbsp Honey
- 6 tbsp melted Coconut Oil
- 2 tbsp Vanilla Extract
- 50g finely chopped Pecans
- Ground Cinnamon for topping
Method
- Preheat oven to 180c (160 fan assisted), 350f, gas mark 4. Line two baking sheets with greaseproof paper.
- In a food processor combine all the ingredients together until form a sticky dough.
- Using a dessert spoon form dough into little balls & flatten into cookie shapes. Leave about 5cm (2 “) gap between the cookies. Makes 36 cookies. 3 cookies per serving.
- Sprinkle cookies with cinnamon. Bake for 7-10 mins. Let cookies cool for 30 mins before removing them from the baking sheets.
