Method
- Beat together the eggs in a bowl.
- Heat coconut oil in a large non-stick frying pan over a medium heat. Pour in eggs.
- As base begins to set, scatter remaining ingredients over the omelette.
- Finish cooking the omelette under a hot grill. 2-3 mins.
