Shopping & Ingredients List:
- 450g skinless, boneless Chicken Breast
- 1kg Sweet Potato, in wedges, skin on
- 2 tbsp Jerk Seasoning
- 3 tbsp Olive Oil
- 1 Lemon, quartered
- fresh Parsley & Dill (optional)
Marinade
- 1 tbsp Olive Oil
- 3 tbsp Balsamic Vinegar
- 3 tbsp Lemon Juice
- 1 tbsp Mixed Herbs
Method
- In a large bowl combine marinade ingredients. Add the chicken to the marinade & leave covered in the fridge for at least an hour.
- Preheat oven 220c (200 fan), 425f, gas mark 7.
- Arrange the wedges on a baking tray & drizzle with 2 tbsp. of olive oil & the jerk seasoning, make sure the sweet potato is well coated then place the tray into the oven for 30 minutes, turning once half way through.
- Remove the chicken from the bowl & discard the marinade. To cook the chicken you can place it into the oven, on a separate baking tray with lemon quarters & herbs if using. Cook for 20-25 minutes.
