Shopping & Ingredients List:
- 200g Almond Flour
- ¼ tsp Baking Soda
- 100g unsweetened Desiccated Coconut
- 75g dried ready to eat Apricots, chopped
- 2 large Eggs
- 2 Egg Whites
- 1 tbsp Vanilla Extract
- 4 scoops Vanilla Protein Powder
- 2 Apples, peeled & diced
Method
- Preheat oven to 180c (160 fan assisted), 350f, gas mark 4. Grease a square baking dish with a little coconut oil.
- Simmer apples in a saucepan in a little water until they can be mashed with a fork. Allow to cool.
- In a food processor combine all the ingredients together until a batter forms. Press into the baking dish.
- Cover dish with tin foil. Bake for 20 mins. Remove foil & bake for a further 5-8 mins. Allow to cool for 1 hour. Cut into squares.
